Ingredients

  • 1 diced cucumber
  • 200g cherry tomatoes, halved

For the dressing

  • 60ml organic Greek olive oil – we recommend Lesvos Groves for this recipe
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Optional: Salt and pepper to taste

Instructions

  • Mix all salad ingredients in a large bowl
  • In a separate bowl, whisk together the ingredients for the dressing
  • Drizzle the dressing over the salad and gently toss
  • Garnish with fresh oregano, and your salad is ready to serve

Lemon and Herb Roasted Chicken

Ingredients

  • 1 whole chicken
  • 60ml organic Greek olive oil – we recommend Avlaki Groves for this recipe
  • 2 sliced lemons
  • 4 diced garlic cloves
  • 2 tablespoons chopped fresh rosemary
  • Optional: Salt and pepper to taste

Instructions

  • Preheat oven to 190°C (374°F)
  • Place the chicken in a roasting pan
  • In a small bowl, mix the olive oil, garlic, and rosemary (and salt and pepper if you choose)
  • Rub the mixture in Step 3 all over the chicken evenly
  • Stuff the cavity of the chicken with the lemon slices
  • Roast the chicken in a preheated oven for 1.5-2 hours, making sure the internal temperature reaches 74°C (165°F)
  • Let chicken rest for 10 minutes before carving
