Instructions
- Mix all salad ingredients in a large bowl
- In a separate bowl, whisk together the ingredients for the dressing
- Drizzle the dressing over the salad and gently toss

Ingredients
- 1 whole chicken
- 60ml organic Greek olive oil – we recommend Avlaki Groves for this recipe
- 2 sliced lemons
- 4 diced garlic cloves
- 2 tablespoons chopped fresh rosemary
- Optional: Salt and pepper to taste
Instructions
- Preheat oven to 190°C (374°F)
- Place the chicken in a roasting pan
- In a small bowl, mix the olive oil, garlic, and rosemary (and salt and pepper if you choose)
- Rub the mixture in Step 3 all over the chicken evenly
- Stuff the cavity of the chicken with the lemon slices
- Roast the chicken in a preheated oven for 1.5-2 hours, making sure the internal temperature reaches 74°C (165°F)
- Let chicken rest for 10 minutes before carving
